The fact is that tea contains tannins, which are responsible for the taste and aroma.

If you pour cold water over the sheet, the components will dissolve much more slowly, and, by the way, will not dissolve completely.

Therefore, the optimal water temperature for “normal” tea is more than 80 degrees Celsius.

However, for certain varieties of white tea it may be lower – from 60 to 80 degrees.

For green tea, the optimal water temperature is considered to be up to 90 degrees, for black tea – from 95 to 100 degrees.

You should not pour boiling water over light teas – this will burn the leaves and destroy the aromas.

In addition, boiling water extracts a large amount of tannins.
