Housewives buy them by the dozen, as a large number of dishes can be prepared from eggs (omelettes, baked goods, boiled eggs, fried eggs, etc.).

In order for chicken eggs to be stored for a long time, they must be of good quality.

When choosing a product, you need to pay attention to the following parameters.

• Smell. If the eggs are fresh, they will have virtually no foreign smell. If you smell fresh protein, then the shell is most likely damaged. This product is definitely not worth buying.

• Shell. When buying eggs, you need to pay attention to the integrity of the shell. Cracks and chips allow bacteria to enter the product, which causes it to spoil and can cause various diseases in humans. The shell should be clean or with small traces of chicken droppings.

• Marking. Factory eggs always have markings on the shell or tray that contain information about the expiration date of the product. Of course, it will be difficult to find out in what conditions this tray was stored, but the information from the marking will help determine the approximate shelf life of the product.

Before storing eggs, you need to make sure that their shells are clean and will not become a breeding ground for bacteria.

Some housewives wash eggs under cold water, but this is not the best option. By its nature, the shell has a protective layer, which becomes thinner when in contact with water, and as a result, bacteria can more easily penetrate into the product. This leads to a reduction in the shelf life of eggs.

Therefore, it is better to wipe the eggs with a dry cloth, and if the chicken droppings have stuck to the shell and you cannot get rid of them in this way, there is another option. Pour warm water into a small container and add some salt. Dirty eggs should be placed in the salt solution for five minutes. You can rub them lightly with a sponge, and then wipe them dry with a napkin or cloth.

In this state they can be easily stored.

The product can be successfully stored indoors (outside the refrigerator), but under certain conditions.

• The temperature in the storage place should not exceed 20 °C, otherwise embryos will begin to develop in the eggs. If the above temperature is observed, table eggs can be stored for no more than three weeks (dietary eggs - up to 7 days). Washed eggs can be stored outside the refrigerator for up to four days.

• It is better to store it in a dark place, since in the presence of light the protein will dry out, which will make the product unsuitable for consumption.

• It is forbidden to store eggs in plastic bags, as the shell must breathe. Special trays, cardboard boxes or wicker baskets can be used as containers.

It is best to keep eggs in the refrigerator. In this state, the product is stored for two to three months. You can put the eggs on the shelf in the door of the unit, but it is best to place them in the vegetable tray.

It is advisable not to store boiled eggs for more than three days, but to eat them immediately. During the heat treatment, the protective shell is destroyed, and such eggs spoil much faster.

If chicken eggs have been in the refrigerator for a long time and it is difficult to determine their freshness without breaking the shell, you can take them in your hands and shake them.

If you hear gurgling, the product is spoiled. If you choose eggs correctly and observe the storage conditions, they will remain fresh and safe for human health for a long time.
