Olivier salad and herring under a fur coat can be made healthier by replacing potatoes with avocado or boiled cauliflower.
You should also replace store-bought mayonnaise with homemade mayonnaise.
This advice was given by dietitian and nutritionist Sofia Kovanova.
Her recommendations are cited by the publication Arguments and Facts .
As Kovanova explained, these New Year's salads can be harmful to health.
The thing is that both salads contain a lot of boiled potatoes, which contain carbohydrates and starch.
This makes the dishes very high in calories, the nutritionist explained.
In addition, potatoes increase blood glucose levels, meaning they are not recommended for people with diabetes or a predisposition to it.
These salads contain a lot of ingredients mixed together, which can cause swelling, added Kovanova.
According to her, in Olivier salad, potatoes can be replaced with avocado, and in “Shuba” and “Mimosa” – with boiled cauliflower.
The nutritionist also recommended replacing sausage with boiled chicken, and store-bought mayonnaise with homemade. Or you can use low-fat sour cream.
It is better to use boiled fish for salads, rather than canned or salted, the expert noted.
