Several years ago, the American scientific journal Journal of Food Science published a study that provided an answer to this question.

Scientists have found that brightly colored yolks contain more vitamins and omega-3 polyunsaturated fatty acids.

According to the authors of the study, this is explained by the fact that bright yolks are typical for eggs from farmed chickens.

The diet of such chickens is richer in carotenoids, which make the yolk bright.

As for the nutritional value of an egg, the color of the yolk does not matter: eggs with a pale yolk contain the same amount of protein, fat, and calories as eggs with a bright yolk.
