The first half of the calendar winter is behind us, and some housewives may have a freezer full of vegetables prepared in the summer.
Eggplants may well be mixed in among the zucchini, tomatoes and greens. We'll tell you what delicious thing you can cook in this case - lasagna, for example.
1. Eggplants, if they are whole, should be cut into circles or slices about a centimeter thick.
2. Beat eggs in a bowl, add 2 tbsp. water.
3. Separately grate Parmesan or other hard cheese, mix with breadcrumbs, add salt and pepper.
4. Prepare a baking tray and place the eggplants there, having first dipped them in eggs and then in a mixture of breadcrumbs and cheese.
5. Bake in the oven at 180 degrees for 20-25 minutes and during this time fry the minced meat in vegetable oil, after 10 minutes add tomato paste and bring everything to a boil.
6. Place a layer of eggplants in a baking dish, then the minced meat in sauce, then the mozzarella and cover everything with eggplants.
Bring to readiness at 200 degrees in the oven for 10-15 minutes.
