To prepare rabbit meat, a cook must have certain skills.
For example, not every cook knows that meat needs to be soaked, which helps to eliminate unpleasant odors and gives it a piquant taste.
The following liquids can be used to soak rabbit meat.
• Milk whey. You can soak rabbit meat in it for up to 8 hours without adding additional ingredients.
• Sour cream or cream, which gives the meat juiciness.
• A mixture of olive oil, crushed garlic and spices that makes meat tender and flavorful.
• White wine, which removes odors and softens muscle fibers.
• Water with kiwi pulp, thanks to the fruit acids of which the meat becomes very tender.
But with vinegar, which can also be used for soaking, you should be careful: if the rabbit is young and fresh, the meat, on the contrary, may change its taste for the worse.
If you choose this option, prepare a weak vinegar solution consisting of a liter of water and 2 tablespoons of vinegar.
