By freezing regular kefir, you can get cheese similar to cream cheese.

Freeze the kefir in a bag or other packaging from which it will be easy to take it out.
Kefir should be kept in the freezer for at least 24 hours. Defrost kefir by leaving it overnight at room temperature.
We take the frozen kefir out of the package and put it in a colander on several layers of gauze. This way the collected whey can be used for baking.
Along with the whey, the inherent sourness of kefir will disappear, and you will get a delicious cream cheese.
It can be used as a spread, added to salads, cheesecakes and other baked goods.
