Roll small balls from the puree. The procedure will not cause any difficulties for the cook if the potato mass is thick enough.
If the dish turns out to be too soft, use cling film: this “shell” will allow you to give the mixture the desired shape.
Place the resulting balls in the freezer for 60 minutes.
Dredge each frozen potato piece in flour, raw egg and bread crumbs.
