Zucchini can be called a universal vegetable, and all because it can be used in any dish, except for sweet desserts.
One of the options for processing vegetables is to prepare them for the winter, to preserve them. Here, instead of the usual caviar, you can pay attention to this recipe.
To prepare you will need:
Vegetables need to be washed. Zucchini is peeled and seeds are removed. Zucchini can be cooked as is. Then we cut the vegetable into cubes.
Tomatoes also need to be peeled. Cut them and put them in a saucepan, cook until they become soft.
Peel the carrots and grate them on a fine grater.
Pass the hot pepper and garlic through a meat grinder.
Add carrot puree and garlic with pepper to boiling tomatoes, stir, cook for 5 minutes and add chopped zucchini.
Separate the bell peppers, chop and add to the vegetables. Add salt, sugar, stir, cook for 25-30 minutes.
Add vinegar and herbs 5 minutes before cooking is complete.
Pour the hot mixture into sterile jars, screw them on and turn them upside down.
After they have cooled, store them in a cool, dark place.
