Every dish has its secrets. And syrniki are no exception.
This article discusses the secrets of syrniki, thanks to which they turn out tender, aromatic and simply incomparable in taste.
Frying syrniki correctly is a real art. It should be noted that each housewife should figure out the intricacies of this procedure herself, depending on the stove, frying pan, and ingredients in the curd mass. The article provides only general recommendations:
- Use a frying pan with a thick bottom.
- Fry under the lid before turning over so that the syrniki are well fried. It is especially important to follow this recommendation if the composition contains pieces of fruit or other ingredients that may remain raw if not heated sufficiently.
- Place the curd mass on a hot frying pan.
- Fry over low heat until the curd mass sets and bakes.
- Use refined vegetable oil. But for flavor, you can add a little butter.
The cottage cheese should be of medium moisture, that is, not dry, but not wet. Wet cottage cheese should be placed on gauze and allowed to drain, kefir or sour cream can be added to dry cottage cheese.
The consistency should be uniform, so the cottage cheese is rubbed through a sieve. Or it can be whipped with a blender.
To keep the cheesecakes in shape, eggs and flour (semolina) are added to the cottage cheese. But here lies the biggest trap. When there are too many eggs and/or flour (semolina), the cheesecakes become tough, which is why they are often called rubbery. The key to a delicate texture and good taste is a lot of cottage cheese and few eggs and flour.
To prevent the cheesecakes from falling apart, they need to be formed small and thin.
The optimal fat content of cottage cheese is at least 10%. Then the syrniki turn out tender, homogeneous, with a rich taste.
Experienced housewives know: to give syrniki a unique aroma, juiciness and incomparable taste, you need to add butter to the dough. It can be cut into small pieces or grated on a coarse grater. During frying, the butter will begin to melt, giving the cottage cheese its taste and aroma.
You can add any ingredients to the syrniki - pieces of fruit, dried fruit, berries, chocolate or cocoa. Or you can make unleavened, spicy or salty syrniki, to which you add herbs, spices, vegetables, cheese.
