How to cook carbonara potatoes: step by step recipe

The collection of culinary recipes needs to be updated periodically, otherwise many dishes risk becoming boring.

Most often, potatoes fall into this category. Boiled, fried, stewed - if you eat them only in this form, then, of course, it will become boring. Carbonara potatoes are a different story!

The name alone is intriguing, although the taste will remain largely the same.

To prepare you will need:

  • 250 g flour;
  • 500 g jacket potatoes;
  • 1 egg;
  • 120 g bacon;
  • 50 g onions;
  • 3 egg yolks;
  • 50 g parmesan;
  • 2 tbsp vegetable oil;
  • 1 tsp black pepper;
  • salt – to taste.

How to cook

Peel the potatoes boiled in their skins and grate them on a fine grater, then add a raw egg and a pinch of salt. Mix with a fork.

Sift the flour and knead the dough. It should be soft and not sticky.

We roll long “sausages” from pieces of dough, cut them into slices and bread each one in flour, giving it the shape of a flat cake.

Put the water on the fire, add salt. At this time, peel and chop the onion, thinly slice the bacon.

First fry the onion, then add bacon, pepper and salt to taste.

In a separate bowl, mix the finely grated cheese with the egg yolks.

Place the potato pancakes in boiling water and remove each one when it floats to the surface.

Let the water drain and put the flatbreads in the pan with the onion and bacon. Stir, fry for 1 minute, remove the pan from the heat, add the cheese and yolk mixture and mix everything well again.

Wait until it cools down, transfer to a plate and sprinkle with grated cheese and herbs on top.
