How to Make Kvass from Birch Sap: 3 Simple Recipes with Honey, Orange and Coffee

Many summer residents and just amateurs make a stock of birch sap, from which you can make excellent kvass.

There are many options - with honey, bread, barley, coffee beans, orange, dried fruits. Making the drink does not require any special knowledge or ingredients.

Honey

This ingredient will add sweetness to the drink. It is much healthier than kvass with added sugar.

Ingredients:

  • birch sap – 10 l;
  • liquid honey – 40 ml;
  • fresh yeast – 50 g;
  • lemon – 3 pcs.;
  • raisins – 4 pcs.

1. First, strain the juice into a large container like an enamel saucepan. Add lemon juice, yeast, honey and raisins.

2. Mix the ingredients, cover the container with a lid or gauze and leave for 3-4 days.

3. Afterwards, all that remains is to strain and pour the drink into jars or bottles.

Orange

This drink is not only healthy, but also perfectly refreshing and thirst-quenching in summer.

Ingredients:

  • birch sap – 2.5 l;
  • orange – 1 pc.;
  • sugar – 1 glass;
  • fresh yeast – 10 g;
  • mint leaves and raisins – to taste.

You can use lemon instead of orange.

1. Strain the juice and then pour it into a large jar. Cut the orange (lemon) into slices and then add it to the liquid.

2. Grind the yeast with 1 tbsp. of sugar and then add to the juice along with the rest of the sugar.

3. Add mint if desired. Mix the ingredients thoroughly, then cover and place in a warm place.

4. After a couple of days, when the kvass has fermented, it is filtered and poured into containers. 2-3 raisins are placed in each container. The finished product is stored in the refrigerator.

Coffee

It tones, quenches thirst and is an excellent substitute for store-bought kvass. The drink can be served either with a regular dinner or during a barbecue feast.

Ingredients:

  • birch sap – 2.5 l;
  • roasted coffee beans – 50 g;
  • rye bread – 3 slices;
  • sugar – 100 g;
  • raisins – 50 g.

1. Pour grains, sugar, raisins (unwashed) and bread crumbs cooked in the oven into a three-liter jar.

2. The ingredients are poured with birch sap and then mixed.

3. Put a glove on the neck of the jar, in which a small hole has been made with a needle. The container is placed in a warm place.

4. When fermentation begins, the glove will inflate. You can strain the drink when the glove deflates. After straining, pour the kvass into jars (bottles) and then put it in the refrigerator.
