To reduce the cooking time of the first course, the main ingredient should be soaked overnight. This rule works with any peas - split, polished, whole.
So, soak the peas in the evening, and start cooking the next day. In the morning, drain the water, and grind the beans in a blender or meat grinder to a medium-grain consistency.
The resulting mass is added to the pan with the fried vegetables and they start to cook. The peas will boil in 5 minutes, and the soup will become thick and aromatic. There is no need to boil the beans for 3 hours.
To make the soup creamy, strain it through a sieve, then add salt, pepper, finely chopped herbs and crispy cracklings to taste.
