How to Make Eggplant Parmesan: An Amazing Recipe

Usually, eggplants are used in a limited number of dishes. These are stewed vegetables, a dish called "mother-in-law's tongue", and caviar.

There is another exquisite recipe. They say that this is Sophia Loren's favorite dish.

To prepare you will need:

  • 1 kg eggplants;
  • 1 onion;
  • 700 grams of tomato puree;
  • 120 g parmesan;
  • 200 g mozzarella;
  • 200 g vegetable oil;
  • 150 g flour;
  • basil, salt - to taste.

How to cook

Fresh eggplants need to be washed and cut into rings 1.5 centimeters thick.

Then we soak them in salted and cold water for 30 minutes to get rid of the bitterness.

When ready, dry, bread in flour, and fry in a frying pan with vegetable oil on both sides.

Next, cut the onion into cubes, fry separately until golden brown, then add tomato puree, simmer the onion for 5-7 minutes.

At this time, grease a baking sheet or dish with vegetable oil.

Then lay out the fried eggplants, pour over the tomato-onion sauce, and sprinkle with grated mozzarella and parmesan on top.

Preheat the oven to 180 degrees and bake the vegetables for half an hour.

Decorate with fresh herbs and serve.
