No one will be able to tell them apart from milk mushrooms: here's how to turn zucchini into a mushroom appetizer

Zucchini has a special feature that chefs often use to prepare unusual dishes.

The vegetable has a neutral taste. Therefore, zucchini can easily be passed off as milk mushrooms, but no one will even guess.

Of course, it is better to use real wild mushrooms, but in some cases you can cheat. The dish will be tasty, aromatic and will please the guests.

The list of ingredients consists of:

  • zucchini – 2 kg;
  • garlic – 4 cloves;
  • sunflower oil – 200 ml;
  • sugar – 75 g;
  • salt – 30 g;
  • dill – 35 g;
  • parsley – 25 g;
  • citric acid – 10 g;
  • pepper (ground) – 5 g;
  • nutmeg – 8 g.

How to prepare an appetizer

1. Cut the zucchini into 1 cm thick strips and place in a deep saucepan.

2. The garlic is pressed through a press and the greens are finely chopped. The ingredients are placed on top of the zucchini bars.

3. Sprinkle with seasonings, salt and drizzle with oil. Mix the products thoroughly.

4. Keep the preparation in the marinade for 4 hours, pressing it down with a plate. The vegetables will give juice, so after the specified time, carefully drain the liquid into another pan.

5. Place the vegetables in pre-prepared sterilized jars. Place the saucepan with the marinade on the fire and bring to a boil.

6. Pour the marinade over the vegetables in the jars to the brim. Then close the jars with lids, turn them over and cover with a blanket for 24 hours.

7. Store the finished snack in the refrigerator or cellar. You can taste the dish in two weeks. During this time, the zucchini will acquire the taste and aroma that are characteristic of pickled milk mushrooms.
