What to cook from eggplants: a recipe for a hot appetizer for a festive table

Having frozen whole eggplants for the winter, the housewife will have to think about what can be made from the vegetables.

More often, the preparation is used for vegetable stew or various rolls. Here is another simple option - eggplants baked with cheese.

To prepare you will need:

  • 600 gr. eggplants;
  • 30 gr. olive oil;
  • 250 g cheese;
  • 250 g tomato paste;
  • 40 g vegetable oil;
  • 30 g sugar;
  • salt;
  • basil;
  • garlic.

How to cook

Defrost the eggplants if you are cooking from frozen ones. It is better to transfer them from the freezer to the refrigerator in advance.

Cut the fruit into 1.5-2 cm thick rings and place on a baking sheet lined with parchment and treated with vegetable oil.

Peel and press the garlic, grate the cheese and mix all the ingredients together.

Preheat the oven to 180 degrees, place the prepared mixture of tomatoes and cheese on the eggplants and bake in the oven for 15 minutes.

Serve hot.
