Defrost the eggplants if you are cooking from frozen ones. It is better to transfer them from the freezer to the refrigerator in advance.
Cut the fruit into 1.5-2 cm thick rings and place on a baking sheet lined with parchment and treated with vegetable oil.
Peel and press the garlic, grate the cheese and mix all the ingredients together.
Preheat the oven to 180 degrees, place the prepared mixture of tomatoes and cheese on the eggplants and bake in the oven for 15 minutes.
Serve hot.
