There is no simpler and more filling breakfast than an omelette, and there is no omelette fluffier and tastier than the Poulard omelette.

This is an unusual, the most magnificent and delicious version of a familiar dish. It is surprisingly easy to prepare. If you have a reason to surprise your loved ones, you will not find a better option.

To prepare you will need:

  • 4 eggs;
  • 5 g butter;
  • salt.

How to cook

To prepare an omelette according to old lady Poulard's recipe, you need to separate the whites from the yolks into different bowls.

Add salt to the yolk to taste and stir with a whisk.

We do the same with the whites, only beat them with a mixer until a thick foam forms.

Heat a clean frying pan and melt the butter in it, in which we will cook the omelette.

Pour the mixed yolks so that the mixture is evenly distributed throughout the pan.

When the yolks have set a little, add the egg white foam, distributing it evenly over the entire surface.

Cook under the lid for 3 minutes on low heat. The main thing here is not to miss the moment so that the yolk does not burn.

Then fold the omelette in half so that the white is between the two layers of yolk, and cook until done.

The omelette is guaranteed to be fluffy and airy.
