How to make buckwheat cutlets: not a gram of meat, but indistinguishable from the real thing

The so-called “fake cutlets” are interesting not only during Lent, but also for those who, for some reason, decided to give up or limit their consumption of meat.

In such conditions, there is only one problem left to solve: how to continue eating properly so that the body does not experience stress and so that the diet does not become boring.

To the rescue come dishes that outwardly resemble familiar semi-finished meat products, but do not contain a single gram of meat.

To prepare you will need:

  • 400 g buckwheat;
  • 300 g onions;
  • salt and spices to taste;
  • 1 tbsp. starch (flour);
  • 1 pc. egg (optional).

How to cook

Boil buckwheat as for porridge and let it cool completely. You can cook it from yesterday's porridge leftovers.

Peel and chop the onion and place it together with the buckwheat in a blender or put it through a meat grinder.

Add salt and spices, garlic, and everything else that is usually added to cutlet mince to taste to the resulting mixture.

If the mixture is dry, you can add water. If you don't want to use an egg, then add starch or flour to bind the ingredients.

Next, form the cutlets, bread them in breadcrumbs or flour and fry on both sides until golden brown.

If desired, you can stew it with sauce or just in water and serve.
