Chefs shared useful tips. These tricks can be used in a regular kitchen, no need to look for any exotic ingredients.
1. The name "syrniki" comes from the word "cheese". The dish is made from cottage cheese, and cottage cheese is a type of young milk cheese. Success depends on the quality of the main ingredient, its fat content, taste and correctly selected proportions.
2. To prevent the syrniki from turning into an incomprehensible mass and from spreading, it is better to use 9% fat cottage cheese.
3. You can achieve a homogeneous and delicate consistency of the dough if you rub the cottage cheese through a fine sieve. And if you add sour cream to the composition, the mass will be more delicate.
4. Flour can be replaced with semolina in small quantities. But in this case, the preparation must be placed in the refrigerator for 30 minutes so that the semolina swells. The product has a more pronounced aroma and gives the cheesecakes elasticity.
5. Gluten-free flour and farmer's cottage cheese made from baked milk create a real miracle. The syrniki acquire a creamy, but not very sweet taste. This dessert is served with sweet sour cream.
6. When using farm cottage cheese, there is one important nuance. The product is unstable, it can contain a lot of whey. Sometimes the ingredient has to be frozen before cooking.
7. Place the syrniki on the frying pan with a spatula to keep their shape. Fry over medium heat, and then bake them in the oven for 4-5 minutes.
