Pancakes are one of the symbols of the ancient Slavic holiday Maslenitsa, which marks the meeting of two seasons.
Winter and spring collide. The holiday marks the escape of the cold and the awakening of nature.
In 2023, Maslenitsa week runs from February 20 to 26. The dates are associated with Cheese Week, the period when Orthodox Christians complete their preparations for Lent.
As for pancakes, you can prepare a luxurious treat for yourself and your family without a drop of flour or starch. They can be served in addition to the traditional version of pancakes.
The list of products consists of:
1. In this recipe, potatoes will replace two ingredients at once - flour and starch. First, the vegetable needs to be washed, peeled and grated on a coarse grater.
2. Pass the garlic clove through a press.
3. Combine the potatoes with garlic, eggs, salt and pepper, then mix thoroughly. Place the mixture in a frying pan and fry on both sides until golden brown.
4. Serve the dish with a sauce made from sour cream (2 tbsp), mayonnaise (2 tbsp), herbs (1 tsp) and table mustard (1/2 tsp).
