The recipe for cutlets is basically the same for most housewives, with only a few ingredients differing.

The main ingredients are roughly the same: minced meat, bread, milk, eggs, onions and spices.

But experienced cooks advise to cross out one ingredient from this list once and for all. With it, you will never get the perfect dish.

Both professional and amateur chefs have admitted that cutlets turn out much better without eggs.

They explain this by the fact that eggs are about 95% liquid. Supporters of this ingredient claim that the product makes meatballs denser.

In fact, it's the other way around. It's because of the eggs that the cutlets fall apart right in the frying pan, turning into mush.

You shouldn't completely give up this ingredient. You can add one yolk to the mince for color and flavor.

Experienced cooks advise replacing eggs with oatmeal. To ensure that they bind the mince properly, you need to take small and medium-sized flakes.

Large ones are not suitable, because they take a long time to steam. The flakes are poured with boiling water in a ratio of 1:2. In 7-10 minutes the oatmeal will be ready to be added to the mince.
